Apple Fennel Salad

This is a wonderful light salad for all occasions and has a wonderful taste of licorice.  It is always nice to be able to make a salad a day or two before and it tastes better every day!

Apple Fennel Salad

Serves: 2 Cooking Time: 1 minutes

Ingredients

  • Salad: 2 apples, thinly sliced (organic green apples taste best but you can also use any apple your prefer)
  • 1 fennel bulb, thinly sliced
  • ¼ cup of chopped walnuts
  • 1/3 cup raisins
  • Dressing: 3 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tbsp honey or Dijon mustard
  • 1 tsp fennel seeds
  • Himalayan salt and pepper to taste

Instructions

Mix dressing ingredients in the bottom of a large bowl. Add sliced apples, fennel, walnuts and raisins and toss until coated well.

Hints: Instead of walnuts you could use slivered almonds, cut up Brazil nuts or even pumpkin seeds.

Instead of raisins you could use cranberries.

Notes

Fennel is a member of the Umbelliferae family of plants which includes celery, parsley, dill and coriander. it contains many health promoting antioxidants and phytonutrients which protect cells from free radical damage. One of fennel's antioxidants also acts as an anti-inflammatory. Fennel is an excellent source of Vitamin C which has antimicrobial properties as well as being supportive of the immune system.
