Favourite Granola Recipe

I have purchased and made many granola recipes over the years but I must say that this is my favourite and my son actually made it one evening, the smell was amazing and it tasted amazing!! I just had to share!

How easy is this to just add all your dry ingredients to a large bowl!

Warm the coconut oil on stove over low heat or a double boiler or in the microwave for a moment and stir. Remove from heat and slowly stir in maple syrup then add to dry mixture.

I like to use parchment paper when baking and I coat lightly with coconut oil once again to make sure nothing sticks. Spread evenly and try not to have the edges to thin with mixture as these areas may burn easily.

If choosing to add chocolate I would recommend organic chocolate bits and just add a few. Make sure you add after baking so that the chocolate does not melt.
Make sure not to over bake. This picture is the granola with the chocolate chunks. It is such a beautiful colour. Let cool completely before storing it.
I like to store in the fridge in glass jars of all sizes.

Ingredients

  • 2 cups organic rolled oats
  • 1 1/2 cups chopped organic, raw nuts (raw is preferable because you will be heating this recipe yourself). You can use any nuts that you love and my favourite combination is 1/2 cup each of pecans, walnuts and almonds plus a few chopped Brazil nuts.
  • 1/4 cup raw, organic pumpkin seeds
  • 1/4 cup raw, organic sunflower seeds
  • 1/2 cup organic coconut flakes (unsweetened)
  • 1/2 cup organic coconut oil
  • 1/3 cup maple syrup (you can use honey if you prefer)
  • 1 tbsp. organic cinnamon
  • 1/2 tsp. Himalayan salt
  • Some like to add 1/4 cup of carob or organic chocolate chips to the mixture after they have been baked but personally, I think they taste terrific as is!!

Preheat oven to 325 degrees F.

Take a large bowl and add all dry ingredients and mix well.

Melt the coconut oil in a pan or for a few moments in the microwave (stir as often as possible). Don't overheat!

Add the maple syrup.

Add coconut/maple syrup mixture to dry ingredients and mix thoroughly.

Take a baking sheet with parchment paper and grease with a bit more coconut oil.

Spread the mixture out pretty thickly on a baking sheet and place in the oven.

Pour granola mixture evenly over pan.

Bake for approximately 25 minutes but stir at 15 minutes then check every 5 minutes after that as this mixture can burn easily!

When ready, remove from oven and let cool. The smell is amazing!!!

This is when you could add some carob or organic chocolate chips.

Be careful when testing before it is cool!!

Notes

Personally, I would recommend making at least 2x this recipe as it is so delicious. I like to store in glass containers and keep in the fridge. Eat as a snack, over oatmeal, yogurt or even to your salad!
