Apple Dapple

APPLE DAPPLE 

   

This is a wonderfully delicious Apple Cake that I have been making every Thanksgiving since my children were small.

It is a wonderful tradition right along side pumpkin pie and ice cream (coconut ice cream of course!). 

This is not a low calorie recipe but it is so tasty.  You can always choose to make it with “healthier” ingredients that I have listed below.

Personally I like to use “Kamut” or “Spelt” flour which are ancient grains and contains far less gluten than wheat but it is not gluten free.

You can always choose to use a gluten free flour if you wish.

Holiday meals can be full of many tempting foods that you do not usually eat throughout the year but that is what makes them special.

Healthy Hints:

Make sure you have lots of vegetables on your place, eat slowly and perhaps go for a walk after your meal.

Instead of a sugary beverage you can choose water or flavoured water.

Limit your alcohol and if you choose to drink wine, choose an organic wine.

 

Family, friends and good food are to be celebrated.  This may not be the day to worry about calories.

Apple Dapple

Print Recipe
Serves: 15 Cooking Time: 40 - 50 minutes

Ingredients

  • 2 cups Organic Cane sugar
  • 1 cup Extra Virgin Olive oil (or ½ with coconut oil)
  • 3 Organic eggs
  • 2 tsp. Organic Vanilla
  • 3 cups Kamut Flour
  • 1 tsp. Himalayan salt
  • 1 tsp. Organic Baking soda
  • 2 tsp. Organic Cinnamon
  • 4 cups Organic Apples (peeled and cut into small chunks)
  • Topping:
  • ¼ pound of organic butter,
  • 1 cup organic brown sugar (or coconut sugar)
  • ¼ cup of organic whipping cream.

Instructions

Bake in a 13 x 9 pan

Lightly grease with coconut oil

Bake at 350 degrees for 30 - 40 minutes until just lightly golden

Just before cake is done, remove from oven for a quick moment and pike numerous holes all over the top of the cake. I like to just pull out the cake on the rack so it is easy to push slowly back into the oven.

Slowly pour the "Topping" that is still warm on the stove over the entire cake covering all corners.

Back another 5 - 10 minutes longer until the cake starts to bubble then carefully remove from oven and let sit.

Eat warm or cool.

** If you have any of the topping left over spread on a parchment covered cookie sheet that is lightly greased with butter or coconut oil. Heat the remaining topping for a few more moments until it bubbles then pour onto sheet and let cool. Oh my goodness, it tastes like toffee/fudge. Enjoy!!

Bowl #1

Mix dry ingredients together: Kamut (or another alternate) Flour, Himalayan salt, Baking Soda and Organic Cinnamon

Bowl #2

Mix wet ingredients together: Cane sugar (or alternative healthy sugar), Olive Oil (or 1/2 with melted coconut oil or organic butter), Organic Eggs< Organic Vanilla.

Wash apples and cut them into thin slices. I keep the skin on.

Mix Bowl #1 ingredients & Bowl #2 ingredients together

Stir or mix until well blended but do not over mix

Fold in the apples until they are evenly spread throughout batter.

Spoon batter into pan then lightly flatten into all corners.

Topping

Warm on top of stove stirring constantly. You can use 2x the topping recipe if you want a richer flavour.

Notes

Best Apples For Baking: Fuji Sweet and juicy, firm, red skin. Granny Smith Moderately sweet, crisp flesh, green skin. I like to use McIntosh Apples for Apple Sauce as they are juicy, sweet, pinkish-white flesh, red skin and go mushy easily. I also like to use the skins in my sauce! Apple Dapple on the other hand is a treat and is full of sugar and fat but eaten in moderation once in a while is special!
